10.  Strawberry MuffinsID #581528

Ingredients:

3 cups plain flour
3 eggs
½ cup sugar
1 cup milk
½ lb butter, melted
1 tbsp baking powder
1½ cups chopped strawberries
½ cup brown sugar
Icing sugar (powdered sugar) to sprinkle

Method:

Preheat oven to 400°F (200°C). Spray non-stick spray (or brush a little cooking oil) into bottoms ONLY of 12-cup muffin tin. Sift flour, sugar and baking powder into a bowl. Stir in brown sugar.

Combine melted butter, eggs and milk, stir into dry ingredients until just blended. FOLD in berries very lightly and carefully - don't beat them. Spoon mixture into muffin cups until two-thirds full.

Bake 20 mins until browned. Sprinkle with icing (powdered) sugar while hot. Serve warm, with or without butter.

Enjoy!

Ingredients (serves 8)

200g (7 oz) butter, chopped
300g (11 oz) good-quality dark chocolate
1/4 cup hot water
1/4 cup cocoa powder
1 teaspoon vanilla extract
1 cup caster sugar
3 eggs, lightly beaten
3/4 cup self-raising flour
pure icing sugar, to serve

Method

Preheat oven to 160°C (320°F). Grease an 8" round cake pan. Line with baking paper. (You could probably use non-stick spray like Pam instead)

Place butter, 200g chopped chocolate and hot water in a heatproof, microwave-safe bowl.
Microwave, uncovered, on HIGH (100%) for 2 to 3 minutes, stirring once a minute with a metal spoon, or until smooth. Add cocoa to warm chocolate mixture. Stir until smooth. Stir in vanilla, caster sugar and egg. Sift flour over chocolate mixture. Stir gently to combine.

Pour half the batter into cake pan. Chop remaining chocolate and sprinkle half over batter. Top with remaining batter and chopped chocolate. Bake cake for 55 to 60 minutes or until a skewer inserted into the centre has moist crumbs clinging.

Allow cake to cool completely in pan. Remove and dust with icing sugar. Serve.

Variation: You could ice the cake with rich chocolate icing or spread with ganache (see related recipe), if you prefer.

Note: This cake keeps well for up to 1 week stored in an airtight container lined with baking paper.

 

8.  Broccoli & Cheese SoupID #571193

Broccoli & Cheese Soup


You will need:

A cooking pot
One bag of frozen broccoli (about four cups worth)
On can chicken broth
1 & 1/2 cup chunked Velvetta cheese
2 cups of light cream
2 tablespoons butter
2 tablespoons of cornstarch
salt & pepper to taste

Add frozen broccoli and chicken broth to the cooking pot. Use your empty broth can, fill it with water once and add that to the pot. Cook under a medium heat until the broccoli is heated. Add the light cream, butter, salt & pepper. While that is heating put the cornstarch in a bowl and mix it with about half of cup of cool water. Stir until it is well mixed and add that to the cooking pot, stirring well as you add it. Once that is done add your cheese and again stir well. Turn the heat down and cook until the cheese is all melted. Easy! This is great when served with pepperoni bites.



Pepperoni Bites

Two cups of Bisquick
One cup of chopped pepperoni
One cup of shredded cheese
About one cup of milk
Garlic Salt

Mix dry ingredients, except garlic salt, in a large bowl. Once they are well mixed add milk until a ball of dough is formed. About like you would use for regular Bisquick biscuits. Drop dough in teaspoon sized balls on a cookie sheet. Sprinkle with garlic salt. Cook in a 425 degree oven for about ten minutes... check often, they will be done when the are lightly browned on top. Serve warm! Kids love these to eat alone but they are wonderful with all sorts of cream soup.

7.  "CACIK" Cucumber salad with yoghurtID #476320

So, here are the ingredients:

1 kg. yoghurt (natural!)
4 large cucumbers
1/2 glass water
1/2 bunch fresh mint or 1 tablespoon dried mint
5 cloves of garlic
4 tablespoons olive oil
6 small ice cubes
1 teaspoon salt, pepper


It's Winter, I know... But this is to think of Summer.
Believe me, sisters, it's very refreshing on a hot Summer day.



Preparation :

Peel and dice the cucumbers and put them in a bowl. Pound the garlic cloves in a mortar with 1 teaspoon of salt. While whipping the yoghurt with a fork or whisk, pour in 1/2 glass of water gradually and mix with yoghurt. Add the cucumbers and garlic to the yoghurt and mix again. Then, put the olive oil, and ice cubes into the bowl. You may add some vinegar if you wish. Decorate the salad with chopped fresh mint leaves or dried mint.

As a child, these cookies were always abundant in our kitchen during the holidays.

*Note6* Aunt Colleen's Cookies
Ingredients:
*Bullet* 1 cup softened butter
*Bullet* 3/4 cup granulated sugar
*Bullet* 2 teaspoons vanilla
*Bullet* 1 teaspoon almond extract
*Bullet* 2 1/2 cups flour
(add more if dough seems too thin)
*Bullet* finely chopped pecans or almonds (optional)
*Bullet* strawberry or apricot jam


Preparation:
Beat butter with an electric mixer at medium speed until creamy.

Add sugar, vanilla, almond extract, and flour while blending well.

Chill dough 2 to 4 hours.

Roll dough into small balls, then roll in the chopped nuts, if using; place on lightly greased cookie sheets.

Make an indention in the middle of each cookie and fill with jam.

Bake at 300° for about 25 to 35 minutes, or until firm and lightly browned on the bottom.

Normally, I don't use the nuts in these cookies, but I've had them both ways and they are Dee-Lish!

If you like mushrooms, this is a delectable appetizer!

*Note6* Lexi's Stuffed Mushroom Caps
Ingredients:

*Bullet* 12-14 large fresh mushrooms
*Bullet* 1/4 cup chopped green onion
(scallions)
*Bullet* 1/4 cup butter
*Bullet* 1/4 cup or 1 oz. of crumbled bleu (blue) cheese
*Bullet* 1/3 cup fine dry Italian bread crumbs
*Bullet* Few dashes of salt & pepper


Preparation:
Remove stems from mushrooms; chop stems. Cook stems and green onion in butter until tender. Add cheese, 2 tablespoons of bread crumbs, salt, and pepper. Fill mushroom crowns with mixture; sprinkle remaining crumbs. Bake in 350 degree oven for 12 minutes.

4.  Finger Food For The Holidays!ID #475350

I was raised in a home where my family taught me to do a lot of cooking. It's definitely one of my favorite things to do!

Okay, trust me when I say that I was never a huge artichoke fan, but this is super yummy. Also, it's fabulous to serve at a holiday get together because it's easy and scrumptious:

*Note6* Lexi's Baked Spinach & Artichoke Dip:
Ingredients:

*Bullet* 1 package frozen chopped spinach
*Bullet* 1 small jar of marinated artichoke hearts
*Bullet* 1 small container of sour cream (8oz)
*Bullet* 1 package of soft cream cheese (8oz)
*Bullet* 1 package of shredded Italian blend cheeses

*Bullet* Few dashes of dried red pepper flakes
*Bullet* Few dashes of garlic powder


*Bullet* i.e. Mozzarella/Asiago/Parmesan. Every grocery store usually carries a mix blend of Italian shredded cheeses.

Preparation & Final Touches:
In a bowl mix thawed spinach, drained artichoke hearts, sour cream, spices, and cream cheese.

Place the mixture into a casserole dish and top with the shredded cheese. Bake in oven at 350 degrees for approximately 25/30 minutes.

Serve warm with tortilla chips, or slices of very lightly toasted French/Italian bread.

It's amazing what all you can do with a can of biscuits*Exclaim* Here are a just a few:

*Note1*Simple chicken and dumplings:
chicken
biscuits
Boil your chicken, seasoned as you like, (a whole chicken or chicken breast.)
Remove the chicken from the bone.
Take the biscuits and pinch them into pieces, add them to the chicken and broth
Cook until biscuits are no longer fluffy *Exclaim*

*Note1*Pizza Bites:
jar of pizza sauce
some pepperoni
some grated cheese
Get a jar of prepared pizza sauce(Ragu makes a good one.)
Place your biscuits on the pan, spread some sauce on each one, add a pepperoni and top with grated cheese.
Bake and serve *Exclaim*

*Note1*Easy & Fast Sugar Donuts
Take the biscuits and using something small punch hole in the middle. Fry the rings of biscuits and the holes unitl they float and have a golden brown color. Remove and dip in your choice of sugar. (regular or powdered works well)*Exclaim*

1.  Simple Chicken SpaghettiID #359663

*Flower3*Chicken Spaghetti*Flower3*

2 chicken breast
onion, salt, pepper, garlic (your seasons of choice)
1 package of spaghetti
1 can of mushroom soup
1 can of cream of chicken soup

Boil your chicken breast in water with salt, pepper, garlic, chopped onions and whatever spices you like.

Remove the chicken and add your spaghetti to the water. Boil to they are soft.

While the spaghetti is cooking, debone your chicken.

Once the spaghetti is finished, add the chicken and the 2 cans of soup; mix and serve.

This is great served with toasted garlic French bread and a salad.

Less than 45 minutes to prepare. Be creative and add any spices you want, peppers etc.
