Ingredients:
3 cups plain flour
3 eggs
½ cup sugar
1 cup milk
½ lb butter, melted
1 tbsp baking powder
1½ cups chopped strawberries
½ cup brown sugar
Icing sugar (powdered sugar) to sprinkle
Method:
Preheat oven to 400°F (200°C). Spray non-stick spray (or brush a little cooking oil) into bottoms ONLY of 12-cup muffin tin. Sift flour, sugar and baking powder into a bowl. Stir in brown sugar.
Combine melted butter, eggs and milk, stir into dry ingredients until just blended. FOLD in berries very lightly and carefully - don't beat them. Spoon mixture into muffin cups until two-thirds full.
Bake 20 mins until browned. Sprinkle with icing (powdered) sugar while hot. Serve warm, with or without butter.
Enjoy!

Ingredients (serves 8)
200g (7 oz) butter, chopped
300g (11 oz) good-quality dark chocolate
1/4 cup hot water
1/4 cup cocoa powder
1 teaspoon vanilla extract
1 cup caster sugar
3 eggs, lightly beaten
3/4 cup self-raising flour
pure icing sugar, to serve
Method
Preheat oven to 160°C (320°F). Grease an 8" round cake pan. Line with baking paper. (You could probably use non-stick spray like Pam instead)
Place butter, 200g chopped chocolate and hot water in a heatproof, microwave-safe bowl.
Microwave, uncovered, on HIGH (100%) for 2 to 3 minutes, stirring once a minute with a metal spoon, or until smooth. Add cocoa to warm chocolate mixture. Stir until smooth. Stir in vanilla, caster sugar and egg. Sift flour over chocolate mixture. Stir gently to combine.
Pour half the batter into cake pan. Chop remaining chocolate and sprinkle half over batter. Top with remaining batter and chopped chocolate. Bake cake for 55 to 60 minutes or until a skewer inserted into the centre has moist crumbs clinging.
Allow cake to cool completely in pan. Remove and dust with icing sugar. Serve.
Variation: You could ice the cake with rich chocolate icing or spread with ganache (see related recipe), if you prefer.
Note: This cake keeps well for up to 1 week stored in an airtight container lined with baking paper.

Broccoli & Cheese Soup
You will need:
A cooking pot
One bag of frozen broccoli (about four cups worth)
On can chicken broth
1 & 1/2 cup chunked Velvetta cheese
2 cups of light cream
2 tablespoons butter
2 tablespoons of cornstarch
salt & pepper to taste
Add frozen broccoli and chicken broth to the cooking pot. Use your empty broth can, fill it with water once and add that to the pot. Cook under a medium heat until the broccoli is heated. Add the light cream, butter, salt & pepper. While that is heating put the cornstarch in a bowl and mix it with about half of cup of cool water. Stir until it is well mixed and add that to the cooking pot, stirring well as you add it. Once that is done add your cheese and again stir well. Turn the heat down and cook until the cheese is all melted. Easy! This is great when served with pepperoni bites.
Pepperoni Bites
Two cups of Bisquick
One cup of chopped pepperoni
One cup of shredded cheese
About one cup of milk
Garlic Salt
Mix dry ingredients, except garlic salt, in a large bowl. Once they are well mixed add milk until a ball of dough is formed. About like you would use for regular Bisquick biscuits. Drop dough in teaspoon sized balls on a cookie sheet. Sprinkle with garlic salt. Cook in a 425 degree oven for about ten minutes... check often, they will be done when the are lightly browned on top. Serve warm! Kids love these to eat alone but they are wonderful with all sorts of cream soup.

So, here are the ingredients:
1 kg. yoghurt (natural!)
4 large cucumbers
1/2 glass water
1/2 bunch fresh mint or 1 tablespoon dried mint
5 cloves of garlic
4 tablespoons olive oil
6 small ice cubes
1 teaspoon salt, pepper
It's Winter, I know... But this is to think of Summer.
Believe me, sisters, it's very refreshing on a hot Summer day.
Preparation :
Peel and dice the cucumbers and put them in a bowl. Pound the garlic cloves in a mortar with 1 teaspoon of salt. While whipping the yoghurt with a fork or whisk, pour in 1/2 glass of water gradually and mix with yoghurt. Add the cucumbers and garlic to the yoghurt and mix again. Then, put the olive oil, and ice cubes into the bowl. You may add some vinegar if you wish. Decorate the salad with chopped fresh mint leaves or dried mint.

As a child, these cookies were always abundant in our kitchen during the holidays.
Aunt Colleen's Cookies
Ingredients:
1 cup softened butter
3/4 cup granulated sugar
2 teaspoons vanilla
1 teaspoon almond extract
2 1/2 cups flour (add more if dough seems too thin)
finely chopped pecans or almonds (optional)
strawberry or apricot jam
Preparation:
Beat butter with an electric mixer at medium speed until creamy.
Add sugar, vanilla, almond extract, and flour while blending well.
Chill dough 2 to 4 hours.
Roll dough into small balls, then roll in the chopped nuts, if using; place on lightly greased cookie sheets.
Make an indention in the middle of each cookie and fill with jam.
Bake at 300° for about 25 to 35 minutes, or until firm and lightly browned on the bottom.
Normally, I don't use the nuts in these cookies, but I've had them both ways and they are Dee-Lish!
