Two Lip-Smacking Vegetarian Recipes
A new way to enjoy pasta. . .vegetarian style!

Looking for new and exciting Vegetarian pasta dishes that will tantalize your taste buds? Try my Asian Style Pasta Salad and my Thirty-Minute Rigatoni with Spicy “Meat” Sauce! Your family and friends will be coming back for more!

Asian Style Pasta Salad

Ingredients:

2 cups fusilli
1/2 package firm tofu (cubed)
1/3-cup soy sauce
1 1/4 Tablespoon honey
1 1/2 Tablespoon minced ginger
1 Tablespoon red wine vinegar

Chopped ingredients:

1 green onion
8 baby carrots
1/3-cup cilantro
2 cloves crashed garlic
1/3 cup coarsely crashed cashews

Boil and drain 2 cups fusilli, add cubed tofu, and set aside. Make the sauce by combing soy sauce, honey, minced ginger, garlic, and vinegar. Zap combined ingredients in microwave for 15 seconds.

Top fusilli with green onion, baby carrots, cilantro, and cashews. Pour sauce and toss gently. Can be eaten warm or cold.

Makes 4 – 6 servings.


Thirty-Minute Rigatoni with Spicy “Meat” Sauce

2 cups rigatoni
1/2 soy rizo “sausage”
1/2 diced yellow onion
1-8 oz. can tomato sauce
1 sm. sliced green bell pepper
1/2 can miniature corn
1/3-cup cilantro

Boil 2 cups rigatoni. In skillet sauté yellow onion until it is translucent, then stir in soy rizo with yellow onion for 2 minutes. Pour in tomato sauce, miniature corn, green pepper and simmer for 5-7 minutes. Drain rigatoni. Put into skillet with meat sauce, toss gently, and top with cilantro and serve.

Makes 4 – 6 servings.
