Black Bean Dip! this simple, tasty dip is good for you, and easily customizable. have fun with it! Ingredients 14 oz can black beans, drained 1 tomato, chopped 1/2 onion (white or yellow), chopped 1-2 limes (depending on how 'limey' you like your dip) 1/2 tsp garlic (fresh or from a jar), minced olive oil for skillet 1/2-3/4 tsp chili powder 1/4-1/2 tsp cayenne powder salt & pepper to taste 1/2-3/4 tsp cumin, ground 1 small fistful fresh cilantro, chopped cheese! (i use 1-2 cups of prepackaged mexican blend grated, but any combination of grated chedder, monterey jack, & asiago will work) *heat skillet to medium, add olive oil, then onion & garlic *after a few minutes, add black beans & mash partially with fork or potato masher *add seasonings (feel free to add more, if you like the spicey) & juice from lime(s) *add tomatoes & almost all cilantro *let simmer for about 5 minutes *take off of heat, and add 3/4 cheese, mix throughout *sprinkle remaining cheese & cilantro on top, let set a few minutes. best eaten warm!! dig in, with tortilla chips. yum! i hope you like it.
