Italian Seafood, Pasta and garden salad

Real Italian Seafood, Pasta and Garden Salad

INGREDIENTS

5 cloves garlic, minced
3 tablespoons chopped fresh parsley
3 tablespoons chopped celery leaves
3 tablespoons chopped oregano leaves
3 tablespoons thyme crushed
3 tablespoons basil chopped
1 teaspoon kosher salt
1/2 cup+ 2 tablespoons extra virgin olive oil
1 cup italian dressing
1 1/2 cups sliced pitted black olives
2 cups chopped red bell pepper
2 cups frozen petite peas
2 pounds bay scallops
2 pounds peeled and deveined small shrimp
2 pounds imitation crab meat
1 pound garden rotini pasta
1/2 cup grated parmasan, or shredded mozzerella cheese - opt.

DIRECTIONS

In a small bowl, stir together the garlic, parsley, celery leaves, oregano leaves, thyme, basil-chopped, sliced black olives, chopped red bell pepper, italian dressing, salt, and olive oil; set aside. Bring a large pot of lightly salted water to a boil over high heat. Pour in the peas, rotini pasta and return to a boil. cook until pasta is al dente. Stir in the scallops, and boil for 3 minutes, then add the shrimp and continue cooking for 1 1/2 minutes more. Drain well, then add imitation crab meat; cool in the refrigerator for 30 minutes.
Once the seafood, peas, and pasta has cooled, toss it with the garlic dressing until coated. Refrigerate 2 hours, toss, chill overnight before serving. Optional~ before serving, sprinkle either cheese over top of salad then serve, but as stated; the cheese is optional. Good addition. This is my own invention, try it, I'm So sure you'll like it, if you like Italian food.
Excellent for a light summer meal also. Very filling, great taste.
