Fresh Fruit Compote
A warm, fruity dessert made simple in the crock pot.

Fresh Fruit Compote

In slow cooker combine:
3 medium peaches, peeled, pitted, and chopped
2 medium pears, peeled, cored, and chopped
2 medium nectarines, peeled, pitted, and chopped
1 small pineapple, peeled, cored, and chopped

Stir in:

1/2 cup dried cranberries
3 tablespoons sugar*
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt.

Pour in 1 cup apple juice.

Cover and cook on high until the fruit is soft, about 4 hours.

Makes 8 servings, ¾ cup each.

*I've made this recipe before using sweetener instead of sugar and its just as good.  I like the "Clabber Girl Sugar Replacer" for cooking.  Look for it with the other sweeteners; it's in a light mint green bag.  You can also find it online at http://www.clabbergirl.com  Follow the “shop online” link.
