What Is For Lunch ?

                                                          What Is For Lunch ?

Today I am the chef of the house. Usually it is my husband and since he is very busy accommodating a very good
friend from Australia, I offered to cook for lunch good for four. This is a fish recipe that I learned from my mother.
Please follow with me:

FISH ESCABECHE
It also means Sweet and Sour Fish

Ingredients:
Four slices white meat fish (See to it that each slice is good enough for one person)
2  tbsp oil
6  pieces calamansi or Philippines lemon or 2 pieces lemon sliced and squeezed
8 cloves garlic finely chopped
3 pieces round onions finely chopped
3  pieces bell pepper sliced lengthwise
5 thinly slices or strips of ginger
2 pieces carrots sliced lengthwise
1/2 cup vinegar
1/2 cup sugar
1/2 cup water
1 tsp salt
1 tbsp soy sauce
2 tbsp catsup
1 tbsp cornstartch diluted in 3 tbsp water
slices of pineapple to garnish

Instructions:
Rubbed the fish with salt and squeezed the calamansi or the lemon all over the fish.Set aside for twenty minutes
so it will absorb so well.
Then deep fry until brown. Remove and place in a big plate.
In another pan, sautee the garlic, ginger and onion. Add the bell pepper and carrot. Then add the vinegar and all the
remaining ingredients having the diluted starch the last one to be added. Make it boil until a bit sticky, then pour it
on top of the fried slices of fish in the big plate.Garnish with sliced pineapple.
Serve with plain rice.
Hmmmmmmm...
The lunch was a success.
Serve any fruit in season as a dessert..
