Maple sugar rib rub

Dry rub marinade for beef short ribs to use prior to smoking.
Makes about 4 cups



1 cup brown sugar

1 cup granulated maple sugar*

½ cup kosher salt

¼ cup sweet paprika

¼ cup chili powder

¼ cup lemon pepper

¼ cup granulated garlic

2 tbsp freshly ground black pepper

1 tsp each of dried basil and thyme



*Maple sugar can be tricky to find. The only place I’ve been successful is Whole Foods but allegedly some specialty health food stores carry it as well. If all else fails just use extra brown sugar and the recipe won’t lose too much in the translation.
