Turkey/Chicken Mexican Casserole Holiday leftover turkey makes this casserole a family favorite. The recipe serves approximately three to four hungry people. Preheat oven to 350 degrees. Lightly cover inside of 3 - 4 quart casserole dish with non-stick spray. Ingredients 1 can evaporated milk or 1 1/2 cups milk 1 can cream of chicken soup 1 can peeled, chopped chili peppers (small or large depending on taste) 2 - 3 cups diced turkey or chicken (cooked) 2 - 3 cups grated cheddar cheese 2 large onions diced (more onion may be used) tortilla chips Directions In a large bowl, mix milk, soup, chilis, and chicken. Cover bottom of casserole with chips; then spoon on a layer of chicken mixture. Sprinkle on onion. Add a layer of cheese. Continue layering until chicken mixture is gone and the casserole is topped with cheese. Bake uncovered for 45 minutes to 1 hour, until center is bubbling. Let set for a few minutes before serving. Serve with a salad.
