Raspberry and Mushroom Salad
2 Tbsp raspberry vinegar
2 Tbsp olive oil (1 Tbsp at a time)
1 Tbsp red raspberry jam
1/4 tsp ground allspice
1 lb small fresh mushrooms
4 cups spring mix salad greens
1 cup fresh raspberries
minced fresh mint (use according to taste)
toasted sliced almonds (use according to taste)
1/4 cup crumbled feta cheese
Whisk raspberry vinegar, 1 Tbsp olive oil, red raspberry jam, ground allspice (this is the vinaigrette). In a large skillet, cook and stir 1 lb halved small fresh mushrooms in 1 Tbsp olive oil over medium-high heat until tender; cool slightly. In a large bowl, combine spring mix salad greens, fresh raspberries, minced fresh mint, and toasted sliced almonds. Add mushrooms and vinaigrette; toss to combine. Sprinkle with feta cheese.
Note: I use Country Gourmet Home red raspberry jam, baby bella mushrooms, Dole salad greens, and Blue Diamond almonds.
