Recipe: Whole Spelt Bread (Breadmaker)
Ingredients:

1 1/4 cups lukewarm water
2 tbsp fat (olive oil or duck fat)
1/4 cups maple syrup
3 1/4 cups of whole spelt flour
1/4 cup wheat gluten
1/4 cup ground chia seeds
1/4 cup oat bran
1 1/2 tsp salt
1 1/2 tsp instant yeast

Method:

1. Put ingredients in the bread-maker in the order listed. Take care that the yeast is in a hollow of dry ingredients at the top (i.e.: that the liquid isn’t touching the yeast).
2. Set the bread machine to 2 lb. light crust whole wheat loaf.
3. Cool for 20 minutes.
4, Wrap the loaf in a tea towel then place it in a ventilated container in the fridge.
5. Anything left after a week can be used as a soup bowl, chopped for bread cubes, or ground in the blender to add to the bread crumb container in the freezer.
