Blueberry-Dijon Chicken
4- 6oz. boneless skinless chicken breast halves
Salt and Pepper to taste
1 Tbsp. butter
1/2 cup blueberry jam
1/3 cup raspberry vinegar
1/4 cup fresh or frozen blueberries
3 Tbsp Dijon mustard
minced fresh basil to taste (optional)
Sprinkle boneless skinless chicken breast halves with salt and pepper. In a large skillet, cook chicken in butter over medium heat for 6-8 minutes on each side. Remove and keep warm. Combine blueberry jam, raspberry vinegar, blueberries, dijon mustard in a skillet. Bring to a boil; cook and stir until thickened. Serve with chicken. Sprinkle with minced fresh basil if desired.
Note: I use Country Gourmet Home blueberry jam, and French's Dijon mustard.
