A journey into eating healthier, low-carb foods

Low-carb foods are good for me, I know that. In the past, I managed to stick to a low-carb diet for several months and I lost a lot of weight and felt better. Alas, I stopped because it was too difficult for me to maintain counting carbs, making recipes list, searching on the internet and in books, and cooking low-carb. So, I gained weight again, and since I don't feel comfortable in my body. And yes, I should exercise more.

But it starts here and now. I want to monitor my food, and what I am eating and hopefully store recipes and write about the process of eating healthier. Let's try this!

Today, I am not sticking to low-carb food. I felt like ordering a banana pancake with white chocolate as a dessert and a panini mozzarella for tomorrow's lunch. I already had an early dinner with leek and a slice of meat. So, I just felt like having this extra dessert.

I don't know what I did but I lost 4 kilos so far. Yes!

I had a lovely afternoon in the sun on a terrace with a friend. I ordered steak with some carrots, and fried sweet potato. Very tasteful. We drank wine. I had two glasses of Chardonnay.

Snacks: Serrano ham rolls with cream cheese. Low carb and so yummy. I could eat them all day! The thinly sliced ham is very salty, in combination with the cream cheese? Wow!

Jamón Serrano is a cured country ham made from conventional pork. From time immemorial in the mountains of Spain, people have packed fresh hams in sea salt and hung them from their rafters to cure. A year to eighteen months later the jamones are ready.

White pigs, which populate Europe, are the source of Jamón Serrano. Those bred in Spain are close relatives to neighboring countries throughout the European Union. Some of the most familiar breeds are Duroc, Pietrain, and Landrace.

Today leftovers from yesterday. With this weather, although it was cloudy, my appetite is down the drain. So, I finished the low-carb dinner: stuffed courgette with tomato and minced meat. It was good!

I almost forgot to order my low-carb dinners for next week. So, they deliver on Wednesday instead of Monday. Which means I have to cook low-carb myself for two days. Will share a recipe later.

I ate fried rice today and I shouldn't. But I love Nassi Rames, a traditional Indonesian dish with fried rice, green beans, tofu, hot meat, and boiled egg. Since my roots are Indonesian I eat this often—some leftovers for later.

Once or twice a month I eat a Turkish pizza from the Turkish take-out around the corner—Yummy, easy food, and cheap. Of course, the pizza bottom is made of dough full of carbs. Sorry guys!

A Turkish pizza with calf, lettuce, tomato, onion, cucumber, and sauce. I looked it up, it has 19,4 carbs. Very high.

But, it cost me only 5,5 euros because I didn't have the required 50 cents extra for the calf, instead of the chicken. *Ha* I have to pay them extra next time. They weren't fussy about it, luckily. I didn't carry more money on me.

Another yummy dish tonight: filled paprikas with minced meat and pumpkin. Very tasteful and moist.

For breakfast and lunch, I ate crisp bread with shrimp salad.

Drank a lot of coffee and cola zero, as usual. *Blush*

Asparagus with ham and egg and turnip. It was edible but I wasn't very hungry. That happens a lot lately due to the heat.

Earlier I had some freshly made soto ayam, chicken noodle soup. And some crispbread with tuna salad. These days I don't eat much.

For lunch in the shade under the trees in the park, I choose mackerel with tomato, pumpkin, and lettuce. Very tasteful. Of course served on two slices of bread, which I should have ignored but didn’t.

For dinner, lasagna with minced meat, cheese, and courgette. Low-carb. Yummy. I have to make a mental note that I loved this dish very much. It was exceptionally tasty.

Yesterday I had one of the homemade low-carb oven dinners. Boboti, an African dish with minced meat and veggies combined with cabbage and cauliflower. I didn't particularly like it, I am afraid. But I ate half of it, a girl has to eat something.

Tonight, in ten minutes or so I try the Low-carb Paella. It looks good, hopefully, it will taste even better.

In a few minutes, I will order again 4 dinners for next week, with delivery on Monday. They also have vegetable smoothies with lots of vitamins. I order a couple of those too. They were very tasty.

Tomorrow and the day after I have plans with friends for lunch. Unfortunately, they don't have low-carb on the menu. Oh wait, I can have a Ceasar salad or something. I can definitely do that.

OMG. I weigh 78,2 kilos. So, I gained 5 kilos in the last few months or so. That's terrible. I have to manage my food intake or things will get ugly. The nurse said I would gain some weight because I now take insulin for my diabetes, but this is ridiculous.

A lot of this is due to stomach fat. I have a sizeable belly.

But I must admit, I knew I was too big in the last few months. I didn't feel comfortable in my own body. Five kilos is a lot!

I opened my fridge at 22:05 pm. just now and took out 100 grams of little salty ham rolls with truffle cream cheese. I looked it up and it has very little carbs. So, I am good. Although I shouldn't eat at this time of night. But okay, I gobbled it up anyway. It's gone now.

Drinking Cola Zero with it. I am a Cola Zero addict, you should know that.

Tomorrow I am going out for dinner. I probably will have the steak, which is something I can eat if I am not mistaken, with some veggies. Alas, without the french fries...I know that.

I am very pleased I have found a company who sells home-made low carb dinners. It's reasonably priced and it beats the regular junk foods that I ordered lately when I am not feeling like cooking myself. So, that's an improvement. Four meals a week. The rest of the week I try to do my own low-carb cooking.

There are recipe sites, and there are cookbooks I have in my possession. I'll give it a try from now on.

By the way, the idea of starting this blog comes from a blog entry I just read. It was about the keto diet but it resonated with me. "Easter Blues by tj ~ endeavors to persevere! . I am in debt to him.

Keto is too severe for me, but low-carb should do the trick. Let's find out!
