The session info of Offline or Private happens automatically when you end your session, either by logging out, or 10-15 minutes after your last page request when the session times out.

If you want your session info to show Private whether you are around or not, set that in Session Privacy. It'll show that way to anyone the setting doesn't include. You may also want to set your Instant Message Availability to match.

If you're going to be away, you can also turn off your Review Request availability on your Reviews tab with the Minimum Gift Points accepted for Review Requests: setting of Do not accept review requests.
