Personal Letter Writing

I want to write a series of handwritten personal letters for the holiday this year, but I'm curious about the tradition of dating letters. I'm going to write a number of them and send them out at once, so should I date the letter on the day I start it, the day I finish it, or the day I intend to mail it? What is the tradition for personal letters?
