Your assumptions are essentially correct. I have also read stories that include angels, demons, characters from mythology, witches (as a race of beings), etc that were included in the genre.

The traditional Paranormal Romance is between a human and a paranormal being--usually a human female, but not always.It follows a boy meets girl, boy loses girl, then finally they get together for good. The paranormal aspect adds new and different conflicts that are not options in regular romance (no issues with a BF that gets furry during the full moon. Or, in the case of a vampire that lives forever while you grow old).
