I think everything that can be written about LOTR has been. It has been done to death. Even before JRR Tolkein died, he was so sick of it he approved the parody book 'Bored of the Rings'. Dungeons and Dragons was based on LOTR in part, and so all fanfic from D&D goes back to LOTR. I've read LOTR fanfic, porn, slash'n'hack, parody and alternate storyline. I've had a LOTR pastiche published. It's really common.
What all this means is - whatever you want to do, it's probably been done before so be prepared for a lot of rejection letters.
