It probably doesn't keep tallies in real-time, and there are good reasons for not doing that:

a) Something might go wrong with delivery, especially with POD where printing is also involved
b) The buyer can return goods that are damaged or otherwise not what they were expecting
c) The buyer can cancel an order up to the point where it is either printed or dispatched
d) Data probably isn't flushed to the primary database for some hours (different sales are probably held in different caches until then)

When you look at your stats, you're almost certainly looking at data from a different cache from the most recent sales. Sales that appear in your stats are "confirmed" sales, and due to the reasons above, and quite possibly other reasons too, any sale is likely to take several days to several weeks before it becomes confirmed.
