It's been suggested several times over the years in "Suggestion Box"  and other places.

In your Biography tab, which is visible to others unless you set the access differently, you have the option of choosing the --- option, which turns the gender field off, and using the 500-character About Me text box to say whatever you want, as noted in "Re: Biography Edit"   by The StoryMaster .
