Eric,

What you are seeing is the title of the image item they are using in their signature

For example, you are using:

 
Signature  [E]
Signature image

So, what I see is the title of that item.

When that is all you see, you can click on the title, the image will appear.

This makes the titles we use for images more important, eh? You might want to consider changing the title of your image from "Signature" to something more identifiable—something you would want folks to see...
