Ode to GF Bread

Ode to Home-Made GF Bread

Many years ago
My wife was diagnosed

With the dreaded
Celiac disease

Could not handle gluten
And so we had to adjust

We tried for a while
To make gluten-free bread
At home

And we had great fun
Experimenting with that
And came up with
some yummy recipes

But over time
it became too much

I miss the smell
Of fresh-baked bread
In the oven

And I miss eating bread
With butter and jam

Sadly, having to give it up
As I am in pre-diabetic adjacent
Territory now
