Outward crunchy, inward soft potatoes and a (more or less) hot tomato sauce ... aren't the simplest things the best ? Granted, I already did a pumpkin pasta recipe => . BUT: the difference here is that the former was filled with pumpkin while THIS one is (at least partly) made of pumpkin. This was indeed a yummy and nutritious breakfast / snack dish. It's healthy because of pumpkin, oats and nuts. Spicy because of the various spices. Sweet enough due to a bit of two sugars.
