Sulu, of course, you can do Spock, sort of (he reached the rank of captain, was in command of the Enterprise for a short time but gave that commd to Kirk, I think), Capt. Erika Hernandez from Enterprise, but she's not well known really ... Definately Pike.

There are other "minor" captains here and there, most notably the previous captains of the enterprise between Kirk and Picard. Robert April, Rachel Garrett, John Harriman, Edward Jellico (?), etc.

Then there's Eric Pressman of the Pegasus, Riker's previous ship (I think) that tested the cloaking device.
