I have often seen items that could use editing on this site. There are some other things you could mention in your post. Are you going to do this for free, or will you be asking for GPs? How large of items are you willing to edit? And, what content ratings are you comfortable with? Not long ago, I started reviewing an XGC rated item. But, It needed an editor.
