To add a bit more detail to what Wordsmitty said:

You should not put the first chapter in the body textbox of the book item. That's for a short introduction of the book; for example, what you'd see on the back cover or inside front flap. The table of contents displays below it.

All the chapters should go into entries.

You can open the edit screen of the book and a second window with an Add Entry page, and copy/paste the first chapter over to an entry.
