Easy Summer Salad

This is a vegetarian recipe and works well as a one-dish light lunch.

Easy Summer Salad

Ingredients:

Base--1 cup quinoa or bulghur (or substitute 2 cups of sliced lightly cooked potatoes or pasta cooked al dente)
1/2 teaspoon salt
1 cup diced, seeded, unpeeled cucumber
2 cups of diced Tomatoes with Basil and Oregano
Garlic about two tsp-minced
1 cup of sliced ripe olives (if you use the canned type, make sure it is totally drained)
1/3 cup crumbled feta cheese
1/4 cup chopped red onion
(Olive oil and lemon juice if you wish)

Directions:

Cook quinoa or bulghur according to package directions. If using quinoa, wash it first before cooking. Let it cool.
Combine cucumber, drained tomatoes, olives, cheese and onion.
Add quinoa or bulghur (or whatever you choose as base) to vegetable mixture.
Add olive oil and lemon juice if you wish, and toss gently to combine everything together.
