With the iPad, it is known that you have to tap the stars twice when reviewing for it to stick. Once will turn them yellow, a second tap will make them purple which will lock in the rating.

Wherever you're writing on the site, you should have a toolbar above the text box and you can click on those for formatting tools. If you use those, then you just have to write between the tags. If you want to change text already there, just tap and hold, then hit Select, adjust your selection size and then tap one of the formatting options to put it around the selection.

The different punctuation icons are hidden from the main iPad keyboard for ease of use. In the lower left hand corner, if you click on the .?123 button, it will take you to a list of them and then one that keyboard, if you press #+= on either side, it will give you the other punctuation.
