What you can do is scroll up outside of the text box to show the toolbar or what I find better would be to write everything out and then if you turn the iPad to the Portrait position, it shows the entire text box with the toolbar. So with it that way, you could scroll through the text box to see what you want to change then use the toolbar with it.
