I have to disagree with you here. Not on the part about reviews simply being opinions or that non of us are professional writers, but on I don't think the only important thing in a review is to keep from stepping over anybody's toes.
A five star review that says "nice job" or "I really like your piece" but doesn't add any specifics, well, I can't see the point of those. I'd like to argue that they're encouraging and offer support, but I don't really think that's the case. They don't even show the reviewer has read the piece, and if all there reviews are like that, then you can't trust they're being honest.
To me a good review is encouraging but also offers some specific details about what the reviewer liked and didn't like in the story. Yes, it's just one person's opinion, but maybe they see something the other doesn't, and the author can combine that one review with those from other readers to get a broader picture of their story.
