I'd say the best rule of thumb is to be sparing with your use of that type of phonetic representation. You can go a long way with word choice and cadence alone. Possibly the only such construction that might be absolutely essential in capturing a Southern dialect would be y'all. Otherwise, you risk calling attention to the word constructions themselves, rather than the content they're meant to convey.
