The two sort options 'Subject' A-Z and 'Subject' Z-A will sort by the topic listed on the subject lines.

If you are looking for emails on a specific topic, you can use the Search option to bring them up. Search can look for the matches in either the Subject field, the Body field, or in any of the address fields. Note that it searches only one field at a time.
