Changing format won't ruin the content; I often play with changing the book types for my book items and it can be fun to see which I like best for each novel/blog/what-have-you. But it sounds like you're more interested in reordering your chapters. Check out "Manage a Book" —specifically, the section titled SYSTEM FORMATS: Order of Entries.
