The Epulaeryu is a form invented by Joseph Spence, Sr. to express one's feelings about some culinary delight. Seven lines with a structure of 7, 5, 7, 5, 5, 3, 1 syllables. Each line contains a separate feature of the particular dish, and the last single-syllable word is followed by an exclamation point to highlight the intensity of emotion attached to this item, as described and demonstrated in the following links:
