Making Soup Soup seems like a simple dish. But when I make soup, I do a lot of considering … What sort of soup am I in the mood for? Do I have the ingredients to make that particular soup, or will I have to settle for something less than my tastebuds crave? Do I have stock? Or is it going to be water-based, which will, of course, mean less depth of flavor. And when I don’t have stew meat or chicken, will I go so far as to use sausage or fish? Hell, no. Not when I’m in the mood for vegetable-beef or chicken-noodle soup. I ask myself, “Would you be happy with sausage and bean soup?” Of course, that answer depends upon whether or not there is a packet of cornbread mix in the pantry.
