When I was starting my writing journey, I did exactly what WakeUpAndLive described. The trick was to not look like you were listening and taking notes!

I also used a lot of conversations i had as close to verbatim as I could, especially early on.

Now, I fall into what Gaby said, and let the characters speak for themselves.
