Rat Race is already a 2001 movie that basically combines The Great Race and It's a Mad, Mad, Mad, Mad World.

Of course, there could be an animated remake using rats.

Or it could be about a rat that has only a certain amount of time to accomplish a task to save the rat community/planet/something. Make it a girl rat, and it becomes a princess movie. Make it pink, and it's about Barbie Rat staying in the real word.
