While interesting... as far as I can tell a key problem with implementing this is the nature of email.
That is to say that each person has a unique copy of an email; it's not a shared resource, like a post or note or comment on a blog, etc. There's no way to associate a like notification to a mutual "email", so there'd be no way to reference what was being liked. It would require a fundamentally redesigned email system that would be more like a DM (direct message) system, rather than actual email.
