I have to be honest, I haven't followed their solo careers a lot. The Beatle I know most about is Paul because, I guess, he had the most mainstream success. As I was only just five when John Lennon died, I didn't take a lot of notice of his post-Beatles music, except for 'Imagine' and 'Happy Xmas (War Is Over)'. Two classics. And, I think, they sum up what John would have wanted to be his legacy. But I'll always have a soft spot for 'Mull Of Kintyre' and 'The Frog Chorus,' both of which I sang in the school choir, and I had a blast with both of them.
The Beatles I don't really know a lot about post Beatles is Ringo. Which is odd because he was my favourite. I searched for him on Apple Music, and I found a fairly recent country album, and I gave it a listen. I really enjoyed it. And it makes sense, as well, when you look at some of the Ringo songs on Beatles albums.
