This is a good, yet heartbreaking story, and the sad part is that there's probably thousands of elderly folks in nursing homes that are going exactly what your character is going through. That's the one thing I'm truly terrified of!
But like I said, you did a good job of telling this, and writing it in the first person really makes it all that much more personal!
And somehow, somehow, you even managed to end it on an upbeat fashion! Bravo! If you'd have to live like that, at least you'd still hopefully have those stories/memories to keep you going.
Great spelling and grammar, but I did spot of tiny niggles:
'Though I can no longer speak(,) the pages and chapters of my life are like a well-read book.
'He thought(,) Santa had claws.' (don't need that comma)
