| SoccerBee I have discovered a new recipe today - Janssons frestelse - an anchovy casserole. It is a Swedish comfort food but is also served at celebrations. It is loaded with dairy so I will have to make adaptions. It is a layered dish of potatoes, onions and anchovies smothered in cream and topped with breadcrumbs. I'm thinking of adding some parsley to the topping. If I leave the peel on the potatoes it will add a bit of fibre. I'm wondering what veg would go with it. Broccoli maybe, peas, sweetcorn - not particularly Swedish - they would probably make something featuring linganberries but I don't think I would get them in UK. This time I am determined not to waste the ingredients. This is something I can make in stages so not too tiring. I've got some raspberries to use up for dessert so some healthy food. My doctor keeps telling me to follow a healthier diet. I say when the NHS starts making ready meals I will eat them. Going by hospital food that's unlikely. | SoccerBee I have just had a takeaway roast dinner. They proclaimed seasonal veg. What would you call seasonal for summer? Tender stem broccoli - okay, carrots - a veg for all seasons, swede - more of a winter offering but okay. Then my nemesis - PARSNIPS - definitely a winter veg (and something I hate). The problem with the dreaded things is they tend to flavour everything they come into contact with. Courgettes (zuchini) - now that's a summer veg. And what about sweetcorn? Peas are always suitable. Aubergines(eggplant) maybe? What would you consider summer veg? Do you have something you absolutely can't stand? That's the problem when you have difficulty cooking for yourself, other people don't necessarily share your taste. I still have a lot of leftover veg (once I've disposed of the dreaded parsnips) so I'm thinking of bubble and squeak. A couple of fried eggs with it. Probably indigestion will follow but hey ho! I used to love really spicy food but my aging stomach can't take it any more. Even steamed fish and mash can upset me these days. 177 words |
| SoccerBee How does the rest of the world cope with heatwaves? I'm sure some places would consider 30C (86F) merely warm, but in the UK we're not used to it. Our homes are built to conserve heat. The last few days I have been melting into my chair, afraid to move away from the fan. What do you eat when it's this hot? In my case pork pies, ice cream, crisps and cake. Not very healthy. No way am I turning the cooker on. Fortunately down in the SW we've had a break today with max 20C and a little rain. Fish and chips for tea. Unfortunately more batter than fish and warmed up chips. If the temperature stays at this level I might cook something tomorrow. If I use the air fryer it shouldn't make the house too much hotter. I'm thinking fish pie. I would live on seafood if I could but it is expensive. Some weeks fish fingers are as near as I can get. Come on those of you who live in hotter climes, what do you eat when the temperature soars? 186 words |
| SoccerBee I don't know how long or how often ad breaks are where you live but in the UK ads are usually about three minutes long and happen every ten minutes or so. Because I can't stand for long I came up with this recipe I call Ad Break Chocolate Cake. In the first ad break I gather my equipment and ingredients. Equipment - food processor, digital scales, bowl for weighing, silicone cake tin. Ingredients - eggs, margarine (or butter), castor sugar, self raising flour, cocoa powder. In the next ad break I weigh my egg(s) in grams for accuracy. I note the weight then crack into the processor. Now I weigh my guide weight of sugar then marge and put each in the food processor. Next I put some cocoa in the weighing bowl and make up to the guide weight with flour. Add to processor and blend. Another ad break and I pour the mixture into the silicone and microwave for three minutes. It should be set but still slightly sticky on top. Allow to cool the cut in half and fill. I use homemade cherry jam but you could use butter cream. I live alone so I base mine on one egg. Bon Appetite 205 words |
| SoccerBee Last night I got a takeaway. I went for a Chinese meal for one. I would like to meet the person who can eat a meal for one in one sitting. For my evening meal I ate half the fried rice with half the lemon chicken, two of the mini spring rolls, and a handful of prawn crackers and I was full. My breakfast this morning was two of the chicken balls with sweet and sour sauce. For lunch I tucked in to the rest of the lemon chicken with some more of the fried rice. I still have a small amount of rice, three spring rolls, three chicken balls and quite a few prawn crackers. I'll save them for munchies during the evening. I munch a lot when I'm bored and at the moment I am very bored. The TV is football, football, more football and oh, tennis. As you can guess I am not a sports fan. Even the supermarkets are full of match day deals. I don't drink beer and I can't eat pizza. Why are there never deals on special diet foods? 187 words |
| SoccerBee Recipe for Gazpacho. Into a blender place a tin of tomatoes, 1/3 cucumber, 2 sticks of celery, a little garlic, salt, pepper and a little lemon juice. Blend. If you want to serve it immediately add a few ice cubes before blending. I like salad but for me and my knackered digestive system it is a bit of a faff. I cannot touch salad leaves. Tomatoes have to be peeled. So does cucumber then sliced paper thin. Peppers need to be cooked and peeled so I usually by them in a jar ready done. Also from a jar, black olives. Instead of my usual fish and chips tonight I am having fish in breadcrumbs with Jersey Royal potatoes and salad. I've been working on the salad part a bit at a time since this morning. 136 words |
| Although it is nice trying exotic foods it does have its consequences - indigestion. I suffer from acid reflux and my doctor gives me medicine for it. There is a side effect, it makes me constipated. The doctor has given me medicine for that too. However it is not without its problems. Whereas the first is on my repeat list the second is not. For items on repeat I simply phone the pharmacy and they deliver. For items not on repeat I have to go through a nightmare of red tape. First I have t go online and do an e-consult. I have to answer about a hundred questions, mostly irrelevant. Two days later I get a text message with further questions and I can only answer if I have a smartphone. I don't. I can't use one. I have a senior phone - big buttons, large font, and LOUD. Now I have to phone the surgery. I ring and I join a long queue. Eventually I get to speak to a receptionist. She doesn't know who sent the text so I am put on hold while she finds out. Oh please, if you're going to leave people hanging get some decent music. Okay, she's back. She knows who sent the text and they will ring me back. Undoubtedly sometime in the next week or so. And all I want is a good S**T. 232 words |
| SoccerBee Recipe for Qusi, a middle eastern dish. You can make it with either a lamb shank or chicken joints. To chicken stock add saffron, cumin, coriander seed, tiny amount of cinnamon and some thyme. Boil the meat in the broth until it falls off the bone. The broth can then be used to cook the rice to serve with the meat. If you want to, and you don't have any dietary problems, you can add flaked almonds, fried onions, pomegranate seeds to the rice. One of the things about being housebound is you have to find other ways to enjoy foreign places. I use food and the internet. I once 'travelled' the length of the River Danube, from my home in Plymouth, through France and into Germany. I found the source of the river in the Black Forest. Then I meandered through a number of countries until I reached the Black Sea. Each day I would find somebody's video of that part of the journey and eat the food appropriate to that destination. | SoccerBee and 𝓦𝓮𝓫W𝓲𝓽𝓬𝓱 The nice Thai lady did offer to cook me something but who wants their evening meal at three in the afternoon? I ordered in fish and chips instead at a more reasonable seven in the evening. I've got some Jersey Royals to use up so I am going to attempt a salad for lunch. Somewhere buried in the freezer is ackee and saltfish - a ready meal but interesting. If I can find it that will be my evening meal. Not sure who my evening carer will be (or what time they will turn up) so I am not relying on their help. I've still got stuff I bought for Christmas in my freezer. I'm hoping my daughter is well enough to come round tomorrow so we can sort some of it out and do some cooking. I know I have scallops and clams. Maybe I can make some kind of chowder. 152 words |
I wish I lived in the Star Trek universe. It would be nice to tell a machine what I want to eat and have that meal instantly appear. How healthy that replicator food is I'm not so sure but the crew look healthy enough. Mind you I saw a photo of the various Captains and it was captioned 'Guess Picard's Enterprise was the only one with a gym.' The transporter would be useful. I could ask one of you to beam me over a meal. I wonder what I might get, BBQ from Texas, curry from India, kangaroo from Oz. and some variety of werst? I'm told my carer tonight is a Thai lady.
