Try it. You'll love it!

Holidays are wonderful times to spend experimenting with new recipes. Here's one that uses some of those left over mashed potatoes from family dinners.
1/4 C hot mashed potatoes
2 1/2 C sifted confectioner's sugar
Dash of Salt
2 squares unsweetened chocolate, melted
1 t butter
1/2 t vanilla
1 1/3 C flaked coconut
Mix potatoes and butter in bowl. Add sugar and beat thoroughly. Add vanilla, salt and coconut.
Pack in greased 8 x 8 loaf pan. Spread melted chocolate on top. Chill until chocolate is firm.
Mmmmm, mmmmmm good!
