Low Carb (virtually NO carb) Dieting & Lovin' IT
Tonight I am cooking Seafood Stuffed Bellpeppers:

1- small package white lump crab meat
1- small package crab claw meat
1- package small scallops
1- package small shrimp
1- red bellpepper
1- yellow bellpepper
2-3 small onions
3- ribs of celery sliced thin
1 bunch green onions
1- bag pork skins
1- stick butter
4- green bellpeppers, cleaned out for stuffing
Grated cheese - your choice.

Preheat oven to 375.

Put red and yellow bellpepper, and onions in a food processor - pulse till well chopped.

Melt butter in heave sauce pan. Add bellpeppers and onions. Saute for 5 to 10 minutes (depends on amount of liquid) Add shrimp, scallops, crab meat, and celery to onions and bellpeppers - continue to saute another 10 minutes or so on medium low heat untill most of liquid is evaporated.

Grind the whole bag of Pork Skins in the food processor untill very fine.

Add almost all of the ground pork skins to the seafood mixture (reserve a few tablespoons for topping on stuffed bellpeppers), and stir well to combine.

Stuff the green bellpeppers with the seafood mixture.

Top with reserved ground pork skins.

Add some water to cover the bottom of the baking pan, enough to come to about 1/2 inch up side of stuffed bellpeppers. Bake for 30 minutes, remove from oven and add cheese topping {optional) continue to bake till cheese melts.

Basically, 0 Carbs.

Can be served with a medley of Pan Roasted vegetables, and a side salad.

Dessert:

Combine one small container of each of the following: raspberries, blueberries, and blackberries
Add 1/2 to 3/4 cup low carb sweetner (splenda)
1 cup water

Simmer in a stainless steel heavy bottom sauce pan.
Serve over Cottage Cheese

Enjoy.
