The entries are still there.

You've got the wrong Subtype set for that many entries. On the edit page of the Book item, change the Subtype from Short Story to Novel, Collection, or Journal/Blog.

That will still result in multiple pages for the entry list. To have all the entry links on one page of the TOC, change the TOC/display from Full Listing; 1 Entry Per Page to Table of Contents: Numbers Only
