It's called pantsing to write without a plan. It's how I write. I start with a "What if...?" question, an idea of one character, a vague idea of an ending (which usually changes), and I go for broke, 4 to 6 weeks later, a novel or novella is done.
As for the multiple projects - that's also not uncommon. I have a novel and screenplay both going on at the moment. When I hit a roadblock in one, I go to the other... or write a poem or short story. Or, like last weekend, I had the PC and laptop both on, novel on one, screenplay on the other, and I was going back and forth between them like an ADHD squirrel. And then, in my notebook, I wrote the first draft of a quick poem, which I've already sold.
