Go to the "Project" menu and select "Meta-Data Settings", then select the "Project Properties" tab. The defaults for your project are displayed but greyed. You can type your new values. The grey doesn't signify un-editable, it just means these are the defaults.
Scrivener 3.1.x
Go to the "Files" menu and select "Compile". There are three tabs: Formats, Section Layouts, and one with just icons. Select the second icon (it looks like a luggage tag), and you can enter the Title, authors etc. Note the values displayed are greyed out, which normally infers un-editable, but in this case only signify they are default values and you are free to edit them.
Alternatively (and this is untried, so no guarantee of success), you can "Save As..." to a new project. While this may not work (changing the title), it is non-destructive, so you'll lose nothing except a bit of disk space. If it doesn't work, you still have the original project.
