This title just pulled me right in. I so understand the delicate procedure of icing a cake. The need to make perfect layers of cake is also a tough lesson to learn for beginners. I used to be the cake baker of the family in my younger days. Once the children grew and left to live on their own, I pretty much stopped making cakes. Once you get "rusty" it's like having to relearn all over again. Your instructions were good and helpful. My only wish is that you gave a more specific recipe for the frosting. The rolling out part I got that it was a fondant frosting you were using for the cake. That makes a beautiful, smooth and shiny surface for a cake. However, the non-veteran baker may have found the information of the frosting a little vague. I always used butter cream frosting in my younger years of baking, then my daughter was planning her wedding and asked me to make the wedding cake. I hadn't made a wedding cake since my brother got married over 30 years ago. Not only that, but I was also making her wedding gown. To fast forward, what I did was make the bride and groom top layer of wedding cake, which was edible. Then I got perfectly shaped styrofoam squares and frosted them with rolled fondant. It was beautiful! I went to Costco and bought 2 pure white full sheet cakes to slice for the rest of the guests. Nobody knew about the switch and were very happy with the strawberry moose filled Costco cake. Sorry about my ramblings, here, but your item stirred up quite a bunch of memories for me.
