Delightful Disaster?

Today, I spent the majority of the day baking. I made two cran-apple cobblers (with the left over filling I had made for the tarts) and a pecan pie just to name a few. I also decided to make mini pecan pies by rolling out biscuit dough, pressing it into the muffin cups and filling them with the pecan pie filling mixture.

Let me say here, I did not use the caro syrup like usual. No....I decided to play around with it and used a mixture of honey and maple syrup. Well. This was a disaster!! First of all, I should have used actual pie crust because the biscuit dough rose...even after I had rolled it out...and when it rose, the pie filling went EVERYWHERE. The honey, maple syrup along with all the brown sugar crystalized and formed a candy substance.....I was ready to toss pan and all into the trash but my husband stopped me. HE spent nearly an HOUR using a butter knife to PRY the cups out...he had to chiseled the hard candy like crust from around each cup...then pry the cup out of the pan. He kept chewing the candy and said it was like a very chewy taffy once you chew it long enough. *Shock2*

Once it cooled, he tried to bite into one...and it was hard as a rock so he still refused to give up. He dunked them in his coffee...and ate them! I tried, but it was like a sweet brittle candy that turned into a chewy leather...the more you chew it. THE DOGS LOVE IT!! They both laid and chewed on one for nearly 30 minutes. If it didn't have so much sugar, I'd say they were great dog treats. NO other hubby I know would put that much effort into eating a disaster just to make me feel better. I mean, he could have had any number of the other treats I baked without a problem...but no...he wanted those terrible disasters!

Today, no baking. I'm taking a break from the kitchen! Out A/C is broken and Monday and yesterday when we had the oven on it got to over 97 in our little apartment. My little fans just do not cut it lol. I grew up with out A/C but now that I'm older, I seem to notice the heat a lot more. I think today I'll focus on some WDC stuff that needs my attention and perhaps I'll work on some Christmas ornaments.
