A new attempt to create a blog. |
| Good gracious, I can't believe my last entry was way back in November of last year! Now, suddenly we have Easter just around the corner. Blink and it will be over. This year, I've decided to go a very non-traditional route for our Easter meal. Easter means spring and nothing says spring like a bbq. Now, IF and when asked, my husband will almost always vote for cheeseburgers...no matter what the occasion is. I like a good burger once in a while as well, but since making necessary dietary changes, tomato and ketchup are not allowed and neither are potatoes...and who wants a burger without tomato or fries on the side? I've had to re-think the issue and think I've come up with an acceptable change. I'm going to make Asian inspired burgers. Ground chicken seasoned with sesame ginger and low sodium soy and topped with crispy mushrooms and carnalized onions. For the side dish, instead of potato salad or fries, I've decided to make a sweet and savory bacon broccoli salad and deviled eggs. Not your typical deviled eggs...I am going to add just a touch of that sesame ginger into the filling...and finely minced red onion and garnish with toasted sesame seeds. For desert, I'm going a more traditional way and making an apple-cranberry crumble with vanilla ice cream on the top. Will this be a hit or a flop, your guess is as good as mine, but I will try to remember to take pics and share the results. Happy Easter! ** Image ID #1665990 Unavailable **  |
