Creamy Poppy Seed Shrimp

You can marinate the shrimp upto 24 hours in advance or make them and chill them an hour before for best results.

I prefer the small shrimps in my salads, but you can play with the various sizes and also try different seasonings instead of the lemon pepper. I like and use Mrs Dash or sometimes a dash or so Creole seasoning.

YOU NEED:
4oz small shrimp chilled
1/2 small English cucumber diced
1/2 Roma tomato diced
2 radishes quartered
1 sprinkle of shredded carrots
1 handful garlic herb croutons
1/2 teaspoon lemon pepper seasoning
1/2 teaspoon dry or fresh parsley
2tablespoons vinegar
Creamy Poppy Seed dressing

πŸ₯—In a small bowl combine shrimp, lemon pepper, parsley and vinegar. Toss gently to coat shrimp.
πŸ„On a large dinner plate, arrange the prepared veggies as you wish. Top with the chilled shrimp and drizzle with the dressing.

I served this salad with a dill pickle spear πŸ₯’ and icy cold unsweetened peach tea. Even our two dogs enjoyed this salad and yes, they ate the veggies!
