Cake Batter Pancakes
1 cup gluten free pancake mix
1 cup gluten free white cake mix
1 cup milk
1 tsp vanilla
2 eggs
Stir all ingredients until blended. Pour 1/4 cupfuls onto hot griddle or electric skillet. Cook until edges are dry. Turn; cook until golden brown. Stack on plates until finished cooking (keep warm in the oven by using the warming setting on the oven). I also put a pat of butter on each one as I make the stack.
Note: I use either Gluten free Country Gourmet Home Buttermilk Pancake mix or Pamela's Gluten Free Pancake Mix. You can get the Country Gourmet Home mix here www.mycountrygourmethome.com/pcockrell and the Pamela's mix can be found at Kroger and Amazon.com. I use Pamela's Gluten Free White Cake Mix.
