Sensational Salads & sizzling Stir Fry

Fiesta Fajita chicken salad

We love all south of the border flavors and this colorful salad is bursting with flavor.

💚This is a healthy remake of a classic taco salad.

YOU NEED:
1/2 Head iceberg lettuce chopped
1 cup baby spinach chopped
2 roma tomatoes diced
1 English cucumber diced
1 cup shredded carrot
1 can whole kernel corn drained
1 can black beans drained
1 teaspoon coriander
1 tablespoon fajita seasoning
1/2 bottle chipotle ranch dressing
1 bag Tyson ready cooked grilled chicken
Tri colored tortilla strips

Preoare and mix all things except the toetilla strips. Chill at least one hour. Sprinkle with tortilla strips when you serve it.

My husband added jalapeno peppers 🌶️ to his. I added a few chopped green olives.

I served this with the usual honey camomile tea ☕.

🥗As with most salads there's many ways to play with this.

Try using different kinds of beans

Use chickpeas

Use shredded cheese

Use avacado chunks

Wrap the salad in tortillas and make wraps

Add onions and garlic

Add green chilies

Add red pepper flakes
